One organ was always left inside the body. The brain was pulled out and thrown away. The lungs, liver, stomach and intestines went into four canopic jars. But the heart stayed exactly where it was — and the reason is the strangest part of the whole process.

Ancient Egyptians believed the heart was the seat of memory, feeling and thought. It also kept a record of every good and bad deed a person did. When a person reached the afterlife, the heart was weighed against the feather of truth, Maat. Anubis watched. Thoth wrote down the result. If the heart was heavy with wrong deeds, the monster Ammit ate it, and that was the second death. A light heart, and the person lived forever.

So the heart was the one part of you that could testify about your life. That is why priests laid a heart scarab on the mummy, with a spell to stop the heart from speaking against its own body.
